The Beauty of Cooking: Summer Brown Rice + Hibiscus Tea

Summer dishes are perfect for experimenting with seasonal fruits and fresh herbs.  I will admit that I got the idea of this particular dish from Karla’s Closet, but after some tweaking and altering, I came up with my own rendition! Let me tell you: It. Is. GOOD.

Summer Brown Rice

2 1/2 c Brown Rice
2 c Black Beans
1 Whole Peach
1/2 c Chopped Tomato
2 tbsp of Pumpkin Seeds
Handful of chopped Cilantro
1/2 c Feta
Chopped Red and Yellow Peppers
Kosher Salt
Black Pepper

Prepare brown rice and black beans.  Place in a bowl.  Add remaining ingredients and mix well.  Add salt and pepper.  







Hibiscus tea compliments our summer fete.  The super flower  is full of anti-aging antioxidants that keeps your skin looking amazing.  

4 Tea Bags
6 cups of water
1 tsp of cinnamon
1 tsp of ginger
1 Lime
Sweetener

Bring water to a boil.  Add tea bags, cinnamon, and ginger.  Pour tea in a pitcher.  Add freshly squeezed lime juice and sweetener.  Pour into glass over ice.  Garnish with a lime wheel.
